Pine Valley

We got Jarens itinerary today, so here is our plan for Pine Valley: We will be there Sunday, Sunday night and Monday. We will probably stay for dinner Monday before coming back to Cedar. Will someone let us know what we owe for Sunday night as well as what the plan for food is? I would be happy to do the food on Monday if we all want to take a day and be in charge of all the meals that day, I think there are 4 days? and with 4 families that might be easy and if Lee & Susan want to do one meal a day and work out what meal it is with each family? I think if would be fun to have new recipes from each family and not just pancakes, sandwiches and the old standards every day!Just some suggestions, but I'll do whatever!

Happy birthday Shayne. One more year closer to 40. You are an old dude. Glad I'll never be as old as you. Hope you treat yourself to a 1/2 day at work and go golfing in the 120 degree sun.

Thanks Papa!

So after Papa came home from Houston...after visiting the Scotts in Texas, he wanted to buy the Santa Clara Scott girls a Nintendo Game boy DS lite. (Something Emma and McKayl apparently have, to play with while they wait for their swim events.) We hadn't ever seen one of these before either because we are OUT of it or because they are so DANG expensive. Well Papa got us one for the girls and they have been enjoying it immensely. Shayne has also been enjoying. Thank you Papa!

Enjoy the clip of Clayre playing the Mario Brothers race car game. It looks like she is driving the race car herself. Funny!

OK, so here's the Ecliar Cake Recipe!


Crust:


1 cup water


1 stick butter


1 cup flour


4 eggs


Boil water and butter in a medium saucepan, remove from heat and add flour. Stir until the mixture forms a ball or pulls away from sides. Add eggs 1 at a time. Spread onto greased cookie sheet and bake at 400 for 20-25min (until golden.)




Layer 1:


2 8oz cream cheese blocks


2/3 cup powdered sugar


1 cup cool whip


Mix together and spread on cooled crust.


* I always double this layer, but I love cream cheese! It was doubled at the BBQ.




Layer 2:


1 large box Instant Vanilla pudding


Make according to Pie Filling directions on the box. Refrigerate for a few hours, then spread on top of the cream cheese layer.




Layer 3:1 large box Instant Chocolate pudding
Make according to Pie Filling directions on the box. Refrigerate for a few hours, then spread on top of the Vanilla Pudding layer.




OPTIONAL:


Top the chocolate layer with cool whip and drizzle with chocolate syrup.




Refrigerate and serve!

Dad's latest adventure

I think you all knew that dad has been fixing a little trailer up to take up to Blackrock to get out of the heat. He hasn't spent a fotune, but has put a little money and a lot of time into it. He finally got everything running and got it looking real cute and he took it up to Blackrock yesterday morning. He came back about 3:00 yesterday afternoon and looked down Blackrock way to see a fire burning. Lightening started the fire. Long story short, he and Darrell were out there until late last night, but were unable to get in to save the trailer or to check Darrell's property. . Dad lost the trailer, plus everything in it, a fresh supply of food, a generator, a chain saw, gasoline containers, some chairs, and various things we haven't thought of yet. We are just sick and I feel so bad for him! Darrell doesn't know what the damages are to his place, but best case scenario he has lost losts of fences and pasture land and he may have lost his cabin and his cattle. They are going to try to get into there this afternoon, but they still may not be able to.

Lucious Lemon Cream

Here's a fruit dip recipe McCall wanted that we had at the BBQ yesterday (sorry those of you who missed out!)...McCall you'll have to post your eclair cake...yummy! Thanks for the BBQ!


Fruit Dip

-4 eggs
-2 C. Sugar
-2/3 cup Real Lemon Lemon Juice from Concentrate
-2 Tbsp. cornstarch
-1 C. water
-2 tsp. vanilla extract
-2 C (1 pint) whipping cream, whipped

In bowl, beat together eggs, 1 C. sugar, and lemon juice. In saucepan, combine remaining sugar and cornstarch; stir in water. Cook and stir until thickened; remove from heat. Gradually beat in egg mixture. Over low heat, cook and stir until slightly thickened. Add vanilla; cool. Fold in whipped cream. Serve with fresh fruit. Refrigerate. Makes 6 cups.
